concrete [regular or stamped] as it never really needs tending to. I blow it off periodically and for the spring/summer clean I power wash it.

Pavers = if I'm thinking what you're thinking, tend to work their way to unevenness and eventually you get weeds once the weed paper wears out. The unevenness and chairs don't work well together.

Wood = needs a lot of tending to. We have a wood deck at out old house and it needed to be sanded and stained almost yearly.

Here's a pic of my patio. Don't mind the messiness, non-blooming trees and winter chairs around the table, we're just starting to finally get nice warm temps and I haven't cleaned or finished setting up for spring/summer yet. The patio basically wraps the entire rear of the house and is usually decorated by my kids with their damn chalk, lol. The only area that is not patio is the brick you see to the right of the pic. The brick is the walls of my dogs outdoor run / toilet:
